Radish Recipes
1. Colorful Salad
Ingredients
- 1lbcorn, cooked, cut off cob
- 1 lb peas cooked
- 1 (15 ounce) can kidney beans, drained
- 1/2 cup minced red onion
- 1/2 cup chopped celery
- 1/2 cup sliced radishes
- 1 cup creamy salad dressing
- 2 tablespoons milk
Directions
- Combine the corn, peas, beans, onions, celery and radish.
- Whisk together the salad dressing and milk or cream. Pour over salad, toss and refrigerate overnight.
2. Radish Salad with Parsley and Chopped Egg
Ingredients
- 2 medium shallots, minced
- 2 teaspoons Dijon mustard
- 3 tablespoons rice wine vinegar
- Salt and pepper, to taste
- 1/2 cup extra-virgin olive oil
- 4 cups thinly sliced radishes
- 1 cup Italian flat-leaf parsley (whole leaves, washed, patted dry, stems discarded), lightly packed
- 4 large hard-cooked eggs, in small dice
Directions
- Whisk shallots, mustard and vinegar with a generous sprinkling of salt and pepper in a 2-cup measuring cup. Gradually whisk in oil in a slow, steady stream to form a thick dressing. (Can be covered and held at room temperature several hours.)
- Place radishes, parsley and chopped eggs in a medium bowl. (Can be covered and refrigerated for several hours.)
- When ready, toss with dressing, adjust salt, pepper and vinegar to taste, and serve.
3. Grilled Radishes
Ingredients
- 20 ounces radishes, sliced
- 2 cloves garlic, minced
- 2 tablespoons butter, cut into small pieces
- 1 cube ice
- salt and pepper to taste
Directions
- Preheat the grill for high heat.
- Place the radishes, garlic, butter, and ice cube on a double layer of aluminum foil large enough to wrap contents. Season with salt and pepper. Tightly seal foil around contents.
- Place foil packet on the grill, and cook 20 minutes, or until radishes are tender.
